【Non-bake Manuka Honey Oreo Cheesecake】

近來特別渴望吃芝士蛋糕。但因為有一段日子沒有烘培了,所剩的材料又不足,結果一直催眠自己忘記那貪吃的慾望。。。

那天見到網友上載她的oreo芝士蛋糕,真的再也抵擋不住誘惑了 >o< 當晚就把材料買回家,準備重開爐灶,做個大蛋糕,吃個過癮!!!!!

因為媽咪手藝不好,把忌廉擠得很難看 ;p
因為媽咪的拍照技術也很有限,速度很慢,
結果才拍到頭幾張像樣的照片,忌廉就開始融化了 ;(
由於很久沒製作冷藏(免烘)芝士蛋糕了,媽咪很擔心會失敗(因為芝士蛋糕的材料會比較重本;而且媽咪真的很很很想吃!!),所以整個製作過程都小心翼翼,跟足食譜。還好,出來的成品還算滿意 ^@^v

第一口咬下去就嚐到淡淡麥盧卡蜂蜜的香甜,實在有點驚喜(原以為蜜糖的味道會被芝士和OREO這兩大主角給比下去,結果它反而有點喧兵奪主哦!ermmmmm..... 這次總算讓媽咪過足了癮!

唯一的敗筆就是那奶油芝士(cream cheese)/~\  因為媽咪光顧的那家超市只賣一個牌子的奶油芝士,別無他選之下,媽咪就買了。結果,蛋糕的芝士味道差了點,奶味也較重 :-( 要是換上P牌子的奶油芝士,效果一定很完美。。。吃芝士蛋糕(尤其是冷藏的),就是要吃到芝士味嘛。。。

媽咪跟足指定的材料,怎麼人家的餅底比這個厚一倍有多?
Manuka Honey Oreo Cheesecake Recipe

Ingredients for cookie base:
100gm Oreo cookies (remove the fillings) - crushed
50gm   Melted butter

1) Mix them together and press into an 8" springform tin. Chill it.

Ingredients for cream cheese filling:
A) 1 tbsp gelatin powder + 70gm water


B) 250gm Cream cheese
      50gm  Icing sugar

C)  60ml    Milk 

D) 260ml whipped cream - whipped till medium peak

E) 1 tbsp Manuka honey
    1/4 tsp Vanilla extract


F) 10 Oreo cookies - chopped coarsely

Some extra crushed Oreo Cookies for sprinkling on top

Let's do it!
1) Measure water into a bowl and sprinkle in the gelatin (without stirring with a spoon). Set aside to allow the gelatin grains to swell (10 mins) before setting the bowl over a pot of simmering hot water. Stir with a spoon and once the gelatin melts, remove the bowl from the pot and set aside to cool to room temperature.

2) Beat B (cream cheese with icing sugar) till well combined.

3) Add in C (fresh milk) and mix till well combined. 

4) Add in gelatin mixture and mix well.

5) Fold in D (whipped cream) and divide mixture into 2 portions.

6) Fold in E (honey and vanilla extract) into 1 portion and F (chopped Oreo cookies) into the other portion.

7) Pour in the white portion into the chilled biscuit base. Level the cream cheese filling and put it into the fridge to let it set (+-10min.).

8) Pour the Oreo cream cheese filling onto the set white cream cheese and level it.

9) Put into the fridge to let it set for 2 to 3 hours. 

10) Remove from fridge to decorate as desire and put back to chill it.

11) Slice and serve chilled.
